&lt;p&gt;Nicole and Sean will begin to serve the crowd at 1am.  The theme of the night is &lt;strong&gt;Hot Stock&lt;/strong&gt;, it&amp;#8217;s that time of the year.  You will have the opportunity to buy super hot delicious soup from both chefs until 2am.  The proceeds are going to &lt;a href="http://kassidysroadtorecovery.blogspot.com/"&gt;Kassidy&amp;#8217;s Army&lt;/a&gt;, chosen by Chef Sean Griffin as the charity.  The money raised will go directly to Kassidy&amp;#8217;s family.  At 1:30 am the main brawl begins, both chefs will remove themselves from their given food truck for the unveiling of ingredients.  30 minutes will be given to create 5 portions of one dish for the judges, the best dish wins.  Their dishes are judged on a point system by the judges, 5 points for Taste, Use of Ingredients and Appearance for a total of 15 points..  &lt;a href="http://www.bordergrill.com/bg_lv/bg_lvwel.htm"&gt;Chef Mike &lt;/a&gt;&lt;a href="http://www.bordergrill.com/bg_lv/bg_lvwel.htm"&gt;Minor of Border Grill &lt;/a&gt;is returning as one of the three judges along side of Donna Rocker. &lt;/p&gt;
&lt;p&gt;&lt;strong&gt; 5 Food Trucks will be serving at the&lt;/strong&gt; &lt;strong&gt;TRUCK STOP from 10-2:30am&lt;/strong&gt;, &lt;strong&gt;&lt;a href="http://roaminghunger.com/"&gt;LOLA D&amp;#8217;S KITCHEN, QUALITY FOOD SERVICE, ROAMIN DOUGH,JUST ROLLIN, ENGINE 1 PIZZA AND BAKE MY DAY.&lt;/a&gt;&lt;/strong&gt;&lt;/p&gt;

&lt;p&gt;Before and during the&lt;strong&gt; BOH BRAWL&lt;/strong&gt; you can express your love of chile by being a part of the judging for the &lt;strong&gt;CHILI COOK OFF!!!&lt;/strong&gt; My buddy Brad will be up against &lt;a href="http://loladskitchen.com/"&gt;Lola D&amp;#8217;s Kitchen&lt;/a&gt; and the &lt;a href="http://www.insertcoinslv.com/"&gt;Owner of Insert Coins&lt;/a&gt;, Chris LaPorte.  The chile will be sold from Quality Food Service, Roaming Dough and Lola D&amp;#8217;s Kitchen, look for the special menus. Once you&amp;#8217;ve purchased a bowl of chile you will have the opportunity be a judge.  I&amp;#8217;m not sure what the winner of the CHILE OFF is going to receive but bragging rights seems to go a long way.&lt;/p&gt;
&lt;p&gt;Now for the&lt;strong&gt; COCK FIGHT&lt;/strong&gt;, Jr Starkus of&lt;a href="http://www.rmseafood.com/"&gt; RM Seafood &lt;/a&gt;is returning for his second battle after taking the first win against Fernie Davidson.  Big thanks go out to David Herlong for assisting with bar set up and producing the product from Diageo.&lt;em&gt; No animals were&lt;/em&gt; &lt;em&gt;injured during this event. Just sayi&lt;/em&gt;n. November 17th JR Starkus will be up against a neighborhood favorite from The &lt;a href="http://thedowntownlv.com/"&gt;Downtown Cocktail Room&lt;/a&gt;, Kevin Gorham.  The DCR is located downtown on Las Vegas Blvd and E. Fremont.  If you have not been to DCR, I&amp;#8217;ll give you a tip, push on the right side of the door to enter. &lt;/p&gt;
&lt;p&gt;The&lt;strong&gt; COCK FIGHT&lt;/strong&gt; will begin between 1:30-2am, we can decide that night.&lt;/p&gt;
&lt;p&gt;Todd Harrington&amp;#8217;s and Team Central will be returning with the PBR trophy.  It will be hard to beat what Brian Howard added but I know Todd is creative. &lt;strong&gt; I&amp;#8217;ll see you on Saturday.&lt;/strong&gt; &lt;/p&gt;

Three chefs competed for the PBR trophy, Joshua Smith, previous Chef of&lt;a href="http://milos.ca/restaurants/las-vegas"&gt; Milos &lt;/a&gt;at Cosmopolitan, &lt;a href="http://andrelv.com/"&gt;Chef Chris Bulen of Andre&amp;#8217;s&lt;/a&gt; and Chef Todd Harrington of Central at Caesar&amp;#8217;s.  Chef Josh just happened to be passing through Vegas and decided to join the competition. &lt;/p&gt;

&lt;p&gt;As usual the chefs sold food to raise money for a local charity and the nights theme of the night was &amp;#8220;BONES&amp;#8221;.  Todd and Chris both pleased the crowd by selling braised short ribs and managed to raise a lot of money for the &lt;a href="http://www.liliclairefoundation.org/"&gt;Lili Clair foundation&lt;/a&gt;.&lt;/p&gt;

&lt;p&gt; Todd was stationed on  &lt;a href="http://www.The-Redneck-Kitchen.com/"&gt;Redneck Kitchen&lt;/a&gt;, Chris Bulen chose &lt;a href="http://lolaslasvegas.com/"&gt;Lola D&amp;#8217;s Kitchen&lt;/a&gt; to prepare their dishes for the crowd and judges while  Josh Smith cooked from &lt;a href="http://www.sheffskitchen.net/"&gt;Sheff&amp;#8217;s Kitchen&lt;/a&gt;.  As a visitor Josh Smith joined the BOH BRAWL at 1:30 when they each received their mystery ingredients. &lt;img src="http://media.tumblr.com/tumblr_md1ymugBft1qkwp93.jpg"/&gt;&lt;/p&gt;

&lt;p&gt;The ingredients were, quail, fresh pomegranate, honey oats, kimchi and jalapenos.  Once the chefs received the ingredients the 30 minutes was given to create 5 portions of one dish for the judges. I was pleased to have Sebastien Silvestri, Vice President of Food and Beverage of &lt;a href="http://www.venetian.com/"&gt;Venetian&lt;/a&gt;, Donna Rocker, owner of&lt;a href="http://www.tommyrocker.com/"&gt; Tommy Rockers &lt;/a&gt;and Ivo Angelov, General Manager of &lt;a href="http://www.lecirque.com/index"&gt;Le Cirque &lt;/a&gt;as judges for the competition. &lt;/p&gt;

&lt;p&gt;30 minutes creeps up quickly and it was time to start the judging.  Each chef was give up to 5 points for taste, use of ingredients and appearance, for a total of 15points. &lt;/p&gt;

&lt;p&gt;On to the &lt;strong&gt;COCK&lt;/strong&gt; Fight&amp;#8230;the Back of the House Brawl welcomed Fernie Davidson from Pour Vous in LA to challenge &lt;a href="http://vegas.eater.com/tags/jr-starkus"&gt;JR Starkus of RM Seafood&lt;/a&gt; in a cocktail brawl. First of all, THANK YOU Dave Heirlong for supplying the liquor and mixes for the battle. Each bartender was given a shaker, ice, muddler, and a array of liquor and bitters etc.  Both JR and Fernie were allowed to bring two ingredients and one tool to use to create 2 drinks in 10 minutes.  I was honored to have Ricardo, lead mixologist of the Bellagio to judge the competition. &lt;/p&gt;

Chef Brain Howard, Comme Ca</title><description>&lt;p&gt;Great job to chef Middleton and Chef Howard for feeding us late night at Tommy Rockers for the BOH BRAWL.  They worked all night and then came out to Tommy Rockers to support the local food trucks with a little competition.  Chef Brain Howard who is very familiar to the Truck Stop took the PBR Trophy home.  The ingredients of the night were not easy to work with.  Chef Roy from Sensi at Bellagio thought it would be a great idea to give the chefs duck legs, pumpkin puree, chia seeds and powered donuts so of course I agreed and Whole Food was kind enough to donate the goodie for the chefs brawl.  &lt;/p&gt;
&lt;p&gt;Once the dishes were made and the judges had a taste we moved into our next competition, champagne sabering.  The owner of Marche Bacchus, Jeff Wyatt was challenged by the Sommelier of Comme Ca, Bruno.  Both gentelmen had to stand in front of their champagne bottle hands behind their heads and after &amp;#8220;ready, Set, Go!&amp;#8221; was announced the race was to see who could saber the champagne faster.  Bruno may be very good at sabering by Jeff Wyatt won the battle! Apparently Jeff does a ritual of sabering champagne every Bastille day at Marche Bacchus and is quite good at this. &lt;/p&gt;

&lt;p&gt;There was a cupcake eating contest that night also.  Bake my Day supplied the cakes and a few friends joined the contest to see who could eat 3 cupcakes the fastest.  I thought the girls were going to tale this home but the guy from crowd won by a swallow. &lt;/p&gt;
&lt;p&gt;NEXT BOH BRAWL is October 13th.  Three chefs battling for bragging rights and to mark the one and only PBR Trophy. &lt;p&gt;Chef Brian Howard of &lt;a href="http://commecarestaurant.com/las-vegas/"&gt;Comme Ca&lt;/a&gt; is a regular at the &lt;strong&gt;TRUCK STOP&lt;/strong&gt; and has competed and judged the &lt;strong&gt;BOH BRAWL&lt;/strong&gt;.  Both times he participated there were different rules in place so this will be his first time for the new format. &lt;/p&gt;
&lt;p&gt;Look for Chef Howard on the Food Network Channel, he appeared on &amp;#8220;Chopped&amp;#8221; this season.  Chef Brain Howard definitely likes to keep his guests and regular fans interested to see what he&amp;#8217;ll be offering at the dinner table next.  My last visit I had the most delicious set of fried pig ears, thanks chef ;). Comme Ca also offers a gastro-pub style menu on Mondays.&lt;/p&gt;

&lt;p&gt;The brawl started off with the coin toss to determine what food trucks would be chosen to use as the chef&amp;#8217;s kitchen for the following hour. Chef Richard of Sage won the toss and immediately asked for Lola D&amp;#8217;s Kitchen.  Chef Michael soon picked the Redneck Kitchen and the battle was on.   For 1 hour each chef was asked to sell street food with theme Silk Road to raise money for Three Square.  Silk Road was the trade route from Asia to Europe.&lt;/p&gt;

&lt;p&gt;While team Circo and Sage were selling their street food while Chef Michael and Chef Richard were given their secret ingredients to create a dish for our judges.  We were very lucky to have &lt;a href="http://vegaseater.com/"&gt;&lt;strong&gt;Susan Stapleton&lt;/strong&gt; &lt;/a&gt;of &lt;strong&gt;&lt;a href="http://vegaseater.com/"&gt;EATER Vegas&lt;/a&gt;&lt;/strong&gt;, &lt;strong&gt;&lt;a href="http://foodplustechno.com/judging-the-back-of-the-house-brawl-im-judging-you-right-now/"&gt;Grace Bascos&lt;/a&gt; &lt;/strong&gt;writer for &lt;strong&gt;&lt;a href="http://vegasseven.com/"&gt;SEVEN Magazine&lt;/a&gt;&lt;/strong&gt; and &lt;strong&gt;Donnna Rocker&lt;/strong&gt; of &lt;strong&gt;&lt;a href="http://tommyrocker.com/"&gt;Tommy Rockers&lt;/a&gt;&lt;/strong&gt; as our judges. &lt;/p&gt;
&lt;p&gt;The ingredients were, Chorizo Iberico, sea salt dried capers, tahini and seaweed. &lt;/p&gt;
&lt;p&gt;Each chef was allowed 30 minutes to create a dish that would be judgeD on three categories for a total of 15 pts.  5PTS for &lt;strong&gt;TASTE&lt;/strong&gt;, 5PTS for &lt;strong&gt;USE OF INGREDIENTS&lt;/strong&gt; &amp;amp; 5PTS for &lt;strong&gt;PRESENTATION&lt;/strong&gt;. &lt;/p&gt;

It is a broad theme but one that will bring a beautiful array of flavors to the plate. &lt;/p&gt;

&lt;p&gt;The Food Truck line up for Saturday will be &lt;strong&gt;SAUSAGEFEST, LOLA D&amp;#8217;S KITCHEN, REDNECK KITCHEN ( naked burritos) , DRAGON GRILLE ( they will be serving Asian style hamburgers), QUALITY FOOD SERVICE ( delicious fish tacos!!) &amp;amp; DREAM CONES, shaved ice&lt;/strong&gt;. A little bit of everything to dazzle your taste buds!!!! &lt;/p&gt;

&lt;p&gt;The&lt;strong&gt; FOOD TRUCKS&lt;/strong&gt; are open for business at &lt;strong&gt;8pm&lt;/strong&gt; and will serve until &lt;strong&gt;2:30&lt;/strong&gt;am at &lt;strong&gt;TOMMY ROCKERS&amp;gt;4275 Dean Martin Dr&lt;/strong&gt;.  The Chefs get started at 1am and serve until 2am, their item will be $6.  The event will benefit&lt;strong&gt; Three Square, Nevada&amp;#8217;s Food Bank. &lt;/strong&gt;&lt;/p&gt;

Fremont.</title><description>&lt;p&gt;I hope you had a chance to join us on our one day return.  It felt good to be on E. Fremont, it wasn&amp;#8217;t that long ago when Sloppi Jo&amp;#8217;s and Fukuburger were side by side in front of Insert Coins and The Beat coffee shop to feed the late night street walkers.  The crew got to see a lot of familiar faces that were once Sloppi Jo regulars.  &lt;/p&gt;
&lt;p&gt;I have to thanks Krystle for coming back for one night with her yummy brookies and cupcakes. Thanks to Josh for sweating over the grill and Brad for being thrown into the fire.  &lt;strong&gt;BIGGEST THANKS&lt;/strong&gt; to&lt;strong&gt; LOLA D&amp;#8217;s KITCHEN&lt;/strong&gt; for allowing us to take their girl out for the night.  &lt;/p&gt;

&lt;p&gt;Jo&lt;/p&gt;</description><link>http://saturdaynighttruckstop.tumblr.com/post/31066285827</link><guid>http://saturdaynighttruckstop.tumblr.com/post/31066285827</guid><pubDate>Fri, 07 Sep 2012 14:21:00 -0400</pubDate></item><item><title>The RETURN of SLOPPI JO's September 3rd</title><description>&lt;p&gt;The smell of &lt;strong&gt;Hatch chiles&lt;/strong&gt; are in the air, you can find them at &lt;strong&gt;Carlitos Burritos&lt;/strong&gt;, &lt;strong&gt;Whole&lt;/strong&gt; &lt;strong&gt;Foods&lt;/strong&gt;, and a few &lt;strong&gt;Albertsons&lt;/strong&gt; in town.  Get them while they are fresh and use them in every dish you make at home.  They work well on eggs, burgers, stew you can even pickle them but just use them and thank me later.  Hatch chilis can be mild or extra hot so be careful when using your dosage.  &lt;/p&gt;

&lt;p&gt;If you were a fan of my truck Sloppi Jo&amp;#8217;s or if you didn&amp;#8217;t have the chance to experience my menu designed around Hatch chiles you will have one opportunity on September 3rd.  I will be posted up with Fukuburger on E.Fremont in front of Insert Coins from 7-10ish or until we get kicked off the street.  I will be on Lola D&amp;#8217;s Kitchen serving up Green Chile cheese burgers, red burgers, pork tacos, frito pie, green chile chicken stew and of course the non-traditional Sloppi Jo. &lt;/p&gt;
&lt;p&gt;My &lt;strong&gt;&amp;#8220;sloppi jo&amp;#8221;&lt;/strong&gt; is slow roasted pork in a red chili sauce topped with a sunny-side up egg, pickled citrus onions and it&amp;#8217;s served with a warm flour tortilla.  &lt;/p&gt;
&lt;p&gt;My right hand lady on the truck was Krystle, she dazzled our taste buds with her delicious cupcakes.  The cupcakes are making a appearance on September 3rd also. NOt sure of the flavors but I&amp;#8217;m almost positive there will be a&lt;strong&gt; breakfast cupcake&lt;/strong&gt; in my future, pancake bottom, buttercream maple frosting with candied bacon!!!!!!!!!!!!!!!&lt;strong&gt; &amp;#8220;EAT&lt;/strong&gt; &lt;strong&gt;ME IM DELICIOUS!&amp;#8221;&lt;/strong&gt;  I just got really excited.  Spread the word because we will have limited supply of everything.  The event is from 7:30-9:30, we will most likely open early and close late.&lt;/p&gt;

&lt;p&gt;Chef Chris Starkus and his team from &lt;a href="http://www.rmseafood.com/"&gt;RM Seafood &lt;/a&gt;took the win over &lt;a href="http://www.bellagio.com/restaurants/fix.aspx"&gt;Chef Chun&lt;/a&gt;k and his crew from &lt;a href="http://lightgroup.com/"&gt;FIX&lt;/a&gt;.  It was a close competition but only one restaurant could go home with the PBR trophy.  Over all the night was a high success.  &lt;/p&gt;

&lt;p&gt;The night started as we watched Chef Chunk prep his tacos off Light Group&amp;#8217;s taco cart from &lt;a href="http://lightgroup.com/las-vegas/dining/diablos-cantina/about/"&gt;Diablos&lt;/a&gt;. The scent was in the air early to create a buzz for their delicious tacos. If you have not joined us at the TRUCK STOP for the Back Of the House Brawl, each chef brings food to sell for 1 hour to raise money for a local charity.  The past few battles have benefited &lt;strong&gt;&lt;a href="http://www.threesquare.org/"&gt;Three Square&lt;/a&gt;&lt;/strong&gt;.  Normally the chefs have a theme to follow but for this BOH BRAWL the chefs served their interpretation of street food but it had to pair with the wines from David Arthur.  Which leads into our special guest for the evening &lt;a href="http://www.davidarthur.com/"&gt;David&lt;/a&gt; &lt;a href="http://www.davidarthur.com/"&gt;Arthur Winery&lt;/a&gt;.&lt;/p&gt;

&lt;p&gt;David himself goes on a wine tour every where to promote his Sauvignon blanc and Mertaggio.  David started the tour in May and hit 22 cities, his last stop was the &lt;strong&gt;TRUCK STOP&lt;/strong&gt; at &lt;strong&gt;Tommy Rockers&lt;/strong&gt; for the &lt;strong&gt;BOH BRAWL&lt;/strong&gt;, August 18, 2012.  The following day he was back on the road to head home for Napa Valley. David Arthur is best known for his &lt;strong&gt;Elevation 1147&lt;/strong&gt;, which by the way just received 99 pts.  I was lucky enough to taste the 99pt vino and it is fantastic juice!! Since we were lucky enough to have David Arthur at the TRUCK STOP we incorporated the wine into the challenge. &lt;/p&gt;
&lt;p&gt;Each chef was given a mystery basket of ingredients to prepare 1 dish for the judges.  The main ingredient was &lt;strong&gt;Rabbit&lt;/strong&gt; picked by myself and Harley, winner of the last Sommelier edition at the BOH BRAWL from Joel Robuchon picked the other three; &lt;strong&gt;liquid smoke&lt;/strong&gt;, &lt;strong&gt;asparagus and mangos&lt;/strong&gt;.  Doesn&amp;#8217;t sound easy to me but both chefs made it look easy.  They only had 30 minutes to make the dish while the rest of their team was still selling their street food to raise money for Three Square. Raised $750 in 1 hour for the Charity;)&lt;/p&gt;

&lt;p&gt;Chef Conlon of FIX is back and ready to throw down once again at the TRUCK STOP.  Chef Conlon aka CHUNK, defeated Chef Pat Hodge of N9NE earlier this year.  Now we have two Chris&amp;#8217; going head to head for the Back Of The House Brawl this Saturday.  This is Chef Starkus&amp;#8217;s first time battling but he is familiar with what goes down at Tommy Rockers so I&amp;#8217;m sure he is ready to put up a good fight. &lt;/p&gt;

&lt;p&gt;The Featured guest is &lt;strong&gt;David Arthur Winery&lt;/strong&gt;.  David Arthur travels across the country once a year to showcase his wine and this year they are making a stop at the &lt;strong&gt;TRUCK STOP&lt;/strong&gt; to serve all of our guest his delicious juice.  It&amp;#8217;s not often that you can jump on a motor home meet the owner of a winery and drink his wine over small talk in the desert.   Kinda Cool&amp;#8230; &lt;/p&gt;
&lt;p&gt;Because the winery is involved it only made sense to add a twist to the challenge and have the chefs pair their dish with one of the wines that David will be pouring.  Each chef is going to have a team of Three, one chef is actually a &lt;strong&gt;SOMMELIER/wine specialist&lt;/strong&gt; so he can hep guide the chef in the right direction for the pairing. &lt;/p&gt;
&lt;p&gt;Don&amp;#8217;t for get that both chefs will show up to Tommy Rockers to sell food for 1 hour, 1-2am to raise money for &lt;strong&gt;Three Square.&lt;/strong&gt;  The chefs are free to sell whatever they want for this part of competition as long as it pairs with David Arthur&amp;#8217;s wine.  &lt;/p&gt;

CONGRATS to da P.U.B.</title><description>&lt;p&gt;Last Saturday the Back Of the House Brawl was between Team Olives led by Chef Jaime Mendoza and Team Todd English P.U.B. led by Chef Jamie Pruitt.  As always the chefs cook off of the food trucks from the night and Chef Jamie was paired with the Redneck Kitchen &amp;amp; Chef Jaime and his team was working from Lola D&amp;#8217;s Kitchen. &lt;/p&gt;

&lt;p&gt;The Chili Dogs were just the start.  At 1:30 Chef Jamie of the PUB and Chef Jaime of Olives were pulled from the food trucks to receive their mystery basket.  I took the liberty to chose the ingredients this week.  I gave them &lt;strong&gt;Hot &amp;amp; Juicy Crawfish, Taro Root, frozen orange concentrate and Szh Chuan beancurd. &lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;By 1:30 I was pretty liquored up, it was a Crown Night.  Luckily I just eat and I&lt;strong&gt; NEVER&lt;/strong&gt; &lt;strong&gt;JUDGE&lt;/strong&gt; the chefs.  The judges for the evening were: JIM BEGLEY, aka @Splurgemonkey on twitter and food writer for the Las Vegas Weekly; Chef Roy Ellamar of SENSI at the Bellagio &amp;amp;&amp;amp; we had a guest judge Chef Alex, you may remember him from Top Chef..&lt;/p&gt;

The chefs came together to form two teams, MGM vs Mandalay Bay.  Team MGM consisted of Chef Claude of Joe Robuchon, Chef Steve of L&amp;#8217;Atlelier and Chef Stephane of Shibuya and Team Mandalay Bay were top chefs Vincent of Aureole, Laurent of Fleur and Bruno from MIx. I was frequently asked &amp;#8220;How did I get all 6 chefs to commit?&amp;#8221;  The truth is they all wanted to do this battle.  After Chef Steve Benjamin&amp;#8217;s victory against the Chef of the Mansions a few months ago he asked if we could put together a French Battle and after seeing Chef Vincent at TASTE he recommended Bastille Day for the Brawl and it was on.  It was surreal to me that I met all the chefs for a meeting at Joel Robuchon, of course they were speaking French most of the time but as a female I was ok with that, it added to my experience;)&lt;/p&gt;

&lt;p&gt;The night was a huge success, the bar at Tommy Rockers was packed the Food trucks turned a profit we raised $913 for Three Square in 1 hour, the chefs had a blast,  and our guests ( Industry ) had the chance to have some tasty food from the local chefs.  I could have not been happier with the turn out.  Thanks to everyone that came out and supported the TRUCK STOP. &lt;/p&gt;
&lt;p&gt;The biggest THANKS goes to our chefs who worked extra hard after their Saturday night shift to serve the community and raise money for our local food bank.  If  you have never been on a food truck in July it is not a desired spot.  It wasn&amp;#8217;t has hot as usual but it was extra humid and I could probably say that the chefs have not sweat that much in a while. Even though they work hard in their kitchens AC is available.  &lt;/p&gt;
&lt;p&gt;The Competition, Chef Mathieu of Guy Savoy was nice enough to chose the secret ingredients for the BOH BRAWL.  In the basket was baby squid, rice cakes, slim jim, red cabbage and sunflower seeds.  Chef Mathieu and his BOH staff are no strangers to the TRUCK STOP and he was a winner of the BOH BRAWL when we first started the chef competition.  Chef definitely did not take it easy on his friends with this basket.  The lucky judges were Susan Stapleton of EATER, Al Mancini food Critic &amp;amp; writer at City LIfe, Jim Begley, writer for the Weekly and a last minute judge Sebastian Silvestri from the Venetian and Palazzo. &lt;/p&gt;
&lt;p&gt;First of all the chefs were serving their own interpretation of street food made with DUCK from their chosen Food truck from 1-2am. Team MGM took over Ben&amp;#8217;s BBQ and Team Mandalay Bay chose Redneck Kitchen. Whomever sold the most food and raised the most money for Three square won a bar tab from Tommy Rockers.  For this Leg of the competition &lt;strong&gt;Mandalay Bay&lt;/strong&gt; won!! The total brought in was $913 and Just over $500 was from Mandalay Bay&amp;#8217;s truck. &lt;/p&gt;

&lt;p&gt;In honor of &lt;strong&gt;Bastille Day&lt;/strong&gt; the BOH BRAWL is going to be dedicated to a few of our amazing local French Chefs.  If you fancy your self a &lt;strong&gt;&amp;#8220;foodie&amp;#8221;&lt;/strong&gt; then you do not want to miss this.  The BOH BRAWL is not going to be the normal set up&amp;#8230;&lt;strong&gt;No Mystery Basket&lt;/strong&gt;&amp;#8230;each chef will sell his own street food 1-2am so you have the opportunity to taste creations from all the chefs.  All 6 French chefs will be paired with a food truck which will act as their kitchen for 1 hour and they be judged on their dish and how many portions they sell.  The BOH BRAWL that evening is going to benefit Three Square so don&amp;#8217;t be afraid to spend, it&amp;#8217;s for a good cause.&lt;/p&gt;

&lt;p&gt;&lt;strong&gt;EVERY SATURDAY 8-2:30am&lt;/strong&gt;&amp;#8230; you want late night &lt;strong&gt;EATs&lt;/strong&gt; after work?  Stop by Tommy Rockers on your way home from the Strip on Saturday and go crazy.  The Truck Stop is a local hang out for the Vegas Food Trucks.  The round up starts at 8pm so you can bring your friends and family early or visit us late for yet another cocktail and yummy food.  Last week two trucks from LA joined us, &lt;strong&gt;Pogi Boy&lt;/strong&gt; and &lt;strong&gt;Fluff Ice&lt;/strong&gt;, I just want ti say thanks for stopping by and supporting the Truck Stop. &lt;strong&gt;Redneck Kitchen&lt;/strong&gt; and &lt;strong&gt;Coast 2&lt;/strong&gt; &lt;strong&gt;Cost Deli&lt;/strong&gt; were also spotted at the Truck Stop!! The Rednecks are very familiar with Tommy Rockers and we all love their Naked Burritos but &lt;strong&gt;Coast 2 Coast&lt;/strong&gt; made there first appearance last Saturday and great reviews. &lt;/p&gt;

&lt;p&gt;The last winner of the Back Of the House Brawl was &lt;strong&gt;Chef Mike of Border Grill.&lt;/strong&gt;  The PBR trophy has made a home for itself at Border Grill inside Mandalay Bay for the last few weeks but it&amp;#8217;s time to get the competition going once again.  May 12th the Saturday Night Truck Stop is honored to have Chef Mike Armstrong and Chef Josh Crain battle on the food trucks.&lt;/p&gt;

&lt;p&gt;When the BOH BRAWL started each chef received a mystery basket of ingredients to create one or two dished for the judges using the food trucks as their kitchen but now the chefs are teamed up with a food truck in advance so they can come ready to sell their own street food for 1 hour, letting everyone in the crowd have the chance to experience the ridiculous late night eats. The last brawl was battle &lt;strong&gt;GRILLED CHEESE&lt;/strong&gt;.  Chef Roy of Sensi and Chef Mike of Border Grill had a blast at 1am pumping out their interpretation of the best grilled cheese but at the end of the day there could only be one winner and Mike took it.&lt;/p&gt;
&lt;p&gt;The BOH BRAWL on May 12th each chef will be selling their own interpretation of &lt;strong&gt;STREET FOOD&lt;/strong&gt; ON A &lt;strong&gt;STICK&lt;/strong&gt;! Each chef can create whatever they want as long as it is served on a stick.  They Judges will be &lt;a href="http://twitter.com/#!/splurgemonkey"&gt;Jim Begley&lt;/a&gt;, writer for the weekly &amp;amp; &lt;a href="http://www.almancini.net/on-video/top-of-the-food-chain.html"&gt;Al Mancini&lt;/a&gt;, Vegas&amp;#8217;s food critic and &lt;a href="http://twitter.com/#!/donnarocker"&gt;Donna Rocker&lt;/a&gt; of Tommy Rockers. Jim Begley aka @splurgemonkey, Al Mancini is @almancinivegas and @DonnaRocker.  Al also has a live webcast every Thursday @7pm, &lt;a href="http://www.almancini.net/on-video/top-of-the-food-chain.html"&gt;Top Of The &lt;/a&gt;&lt;a href="http://www.almancini.net/on-video/top-of-the-food-chain.html"&gt;Food Chain&lt;/a&gt;. The chefs will be judged on a point system, 5 points for taste, 5 points for creativity and 5 points best interpretation of street food, a total of 15 points.&lt;/p&gt;
&lt;p&gt;Chef Mike Armstrong will be serving his street food from the&lt;a href="http://www.fukuburger.com/"&gt; &lt;strong&gt;FUKUBURGER&lt;/strong&gt; &lt;/a&gt;truck and Chef Josh Crain will be cooking on &lt;strong&gt;&lt;a href="http://loladskitchen.com/"&gt;LOLA D&amp;#8217;s Kitchen&lt;/a&gt;&lt;/strong&gt;. The &lt;a href="http://redneckkitchen.web.officelive.com/default.aspx"&gt;&lt;strong&gt;REDNECK Kitchen&lt;/strong&gt; &lt;/a&gt;and &lt;a href="http://snowonoshaveice.com/"&gt;&lt;strong&gt;SnOwOnO&lt;/strong&gt; &lt;/a&gt;will also be at Tommy Rockers for your pleasure;) &lt;/p&gt;
&lt;p&gt;&lt;strong&gt;AS ALWAYS&amp;#8230;. spread the word, the food trucks will be at &lt;a href="http://www.tommyrocker.com/"&gt;TOMMY ROCKERS&lt;/a&gt;, 4275 DEAN MARTIN @8pm until 2:30am&amp;#8230;. BOH BRAWL starts at 1am.&lt;/strong&gt;&lt;/p&gt;
